In February 2020, we teamed up with Summit Institute on Powder Mountain to host a conversation about culture, flavor, and environmental impact in the culinary arts.
For its first Culinary Weekend, Summit Institute brought together culinary industry experts and renowned chefs, and FUTURE OF WOMEN founder Hallie Applebaum moderated a panel about sustainability with Chef Nyesha Arrington, Health-Ade Kombucha Co-Founder Vanessa Dew, and Master Sommelier Laura Williamson.
During the panel and throughout the weekend, our panelists taught us about sustainability in the culinary arts:
Nyesha Arrington
Chef
World-renowned chef and recognized as one of the 30 Under 30 in the 2012 list by Zagat.com, Nyesha Arrington is an ardent believer in using farm-fresh, locally-sourced ingredients and is not afraid to bring in products from around the world as she feels it's the best way to draw global inspiration when creating her works of art.
Vanessa Dew
Chief Sales Officer & Co-Founder, Health-Ade Kombucha
Vanessa Dew co-founded Health-Ade Kombucha in 2012 alongside her best friends and husband-and-wife team, Justin and Daina Trout. Health-Ade is committed to real food - part of that is making real kombucha, and part of it is doing their part to increase access to real food for the people who need it most. Health-Ade is available in 30,000 stores including Whole Foods, Target, and Trader Joes.
Laura Williamson
Master Sommelier
One of only 27 female Master Sommeliers in the entire world, Laura Williamson loves to speak, consult, and teach wine lovers to expand their joy and become their best personal guide by exploring exotic grapes of remote areas to unlock their palate via the embrace of individual preference.
Hallie Applebaum
Founder, FUTURE OF WOMEN
Hallie Applebaum is the founder of FUTURE OF WOMEN, a traveling breakfast series that elevates and celebrates female voices. In collaboration with award-winning female chefs, Olympic athletes, Emmy-winning producers, top Billboard musicians, and New York Times journalists, FOW hosts events in cities around the world, from Tokyo to Los Angeles to Mexico City to Tel Aviv. We love celebrating women-led, mission-driven brands, so we invited Brightland and Health-Ade to join us! Nyesha cooked with Brightland's ALIVE and AWAKE olive oils and Health-Ade treated us to blood orange carrot ginger kombucha.
